Which Japanese knife shape does what?
Santoku, Nakiri, Kiritsuke, Petty: drawn side by side, explained by what they are built to do rather than by what they cost.
Reading time ≈ 14 minutes
Japanese knife names sound like a secret language, and shops rarely explain them. The truth is that most of the differences come down to two things you can see in a drawing: how curved the edge is, and how the tip is shaped. Everything else, the steel, the finish, the handle, is a separate conversation.
This guide covers the four shapes that matter in a home kitchen. No product photos, just the profiles, so you can see what actually separates them.
1.Anatomy of a blade
Five words appear over and over once you start reading about knives. They are worth two minutes.
- Spine: the blunt top of the blade. Its thickness tells you how heavy the knife feels and how well it will wedge through dense vegetables.
- Edge: the cutting line. How straight or curved it is decides the cutting motion the knife wants.
- Heel: the back corner of the edge, nearest your hand. Used for anything that needs force.
- Tip: the front. Used for detail: scoring, coring, fine slicing.
- Ferrule: the collar between handle and blade. On Japanese Wa handles it is usually a contrasting ring of wood or horn.
2.All four, drawn to the same scale
This is the single most useful picture in this article. Same scale, same handle, so only the blades differ.
3.Three cutting motions: and why shape follows them
Before the shapes make sense, the motions have to. There are three, and every blade profile is a compromise between them.
The push cut is the Japanese default. The blade goes straight down and slightly forward, and the food separates in one pass. It is quiet, it is fast, and it needs a fairly flat edge: the flatter the edge, the more of it touches the board at once.
The rock chop is the European default. The tip stays on the board and the handle rises and falls, rocking the blade through a pile of herbs. It needs a curved edge to work at all. This is why a French chef's knife has a deep belly and why rocking a Nakiri simply does not work.
The pull cut draws the blade backwards through the food, using the length of the edge like a saw stroke without the sawing. It is how you slice raw fish cleanly, and how you cut a tomato without crushing it. It rewards a long, thin, straight blade.
Now the shapes explain themselves: the flatter the profile, the more it favours push and pull cuts; the more curved, the more it favours rocking.
4.Santoku: the generalist
Santoku means "three virtues": meat, fish and vegetables. The name is a claim about breadth, and it is the shape that replaced the Western chef's knife in most Japanese homes.
Look at the profile. The edge is mostly flat with a gentle lift near the front, and the spine curves down to meet it in a rounded, dropped tip. That geometry sits deliberately in the middle: flat enough that push cuts work properly, curved enough that a short rocking motion is still possible when you want it.
The dropped tip is the other half of the design. It keeps the point low and close to the board, which makes the knife feel controlled and unthreatening, and it removes the sharp upswept point that catches beginners out.
What it does well
- Dicing, slicing and portioning across every ingredient group.
- Working on a small or crowded board, where a longer blade would fight you.
- Being handed to someone else in the household without an explanation.
Where it gives ground
- Large volumes of vegetables: a Nakiri is faster and cleaner.
- Long slicing strokes through a roast or a large fish, not enough blade.
- Fine tip work: the rounded tip trades precision for safety.
5.Nakiri: the vegetable specialist
Na-kiri means, plainly, "leaf cutter". It looks like a small cleaver and behaves nothing like one: it is thin, light and not intended to chop through anything hard.
Two features define it, and both exist for the same reason. The edge is perfectly flat, so the entire length lands on the board simultaneously. Nothing is left connected by a hinge of skin at the end of a stroke: the failure mode you get when a curved blade lifts away from the board before the cut finishes. And the blade is tall, which gives your knuckles clearance and lets you use the broad face to sweep what you have cut off the board.
The tip is squared off and blunt, which is the honest trade: this knife cannot core a tomato, score a fillet or trim silverskin. It was never asked to.
What it does well
- Volume vegetable prep: cabbage, onions, leeks, root vegetables, herbs.
- Very thin, even slices, because the flat edge makes consistency easy.
- Scooping: the tall face doubles as a bench scraper.
Where it gives ground
- Anything requiring a point. There isn't one.
- Meat and fish: possible, but you are using the wrong tool.
- Rocking. The flat edge makes it physically impossible.
6.Kiritsuke: reach and precision
The Kiritsuke is unmistakable: a long blade whose spine drops in a straight diagonal to meet the edge at a fine point. The shape is sometimes called a reverse tanto, and in traditional Japanese kitchens carried a rank: it was the head chef's knife, and not a shape juniors reached for.
That reputation is half myth. The version sold for home kitchens is double-bevelled and behaves like a long, flat chef's knife rather than a specialist tool. What remains true is the geometry: it is the longest of the four and the flattest along the edge, which makes it superb at long pull cuts and push cuts, and poor at rocking.
The angled tip is a genuine feature, not styling. It puts a fine, acute point exactly where you can see it, which is excellent for scoring, precise trimming and fine julienne. It is also easier to catch on the board or on a bone if you are careless: that, more than anything, is the source of the "advanced" label.
What it does well
- Long, clean slices through larger ingredients in a single stroke.
- Detail work at the tip without switching knives.
- Push cutting, where the flat edge is a real advantage.
Where it gives ground
- Small boards and cramped worktops: the length becomes a liability.
- Rocking, entirely.
- First-time buyers, who will get more out of a Santoku.
7.Petty: the small one you use most
From the French petit. Sometimes sold as a utility knife, it sits between a paring knife and a chef's knife: typically 120 to 150 mm.
The profile is essentially a chef's knife shrunk: a curved belly and a fine point. That curve, useless on a Nakiri, matters here because a lot of the Petty's work happens in the air rather than on a board, peeling, trimming, segmenting, where a curve follows the shape of what you are holding.
It is the knife nobody sets out to buy and everybody ends up using several times a day. Hulling strawberries, deveining chillies, slicing a single shallot, segmenting citrus, cutting cheese, trimming fat, opening things you should not open with a good knife.
What it does well
- In-hand work where a large blade is unwieldy or unsafe.
- Detail: coring, scoring, garnishes, precise small cuts.
- Small jobs where fetching the big knife feels absurd.
Where it gives ground
- Anything bigger than an onion becomes slow.
- Volume prep, not enough blade to be efficient.
8.And the Gyuto, since everyone asks
A fifth name comes up constantly: the Gyuto. It is simply the Japanese interpretation of the Western chef's knife: same curved belly and upswept point, but thinner, lighter and harder than its European counterpart.
Where it fits: if you have cooked with a French or German chef's knife for years and like rocking, a Gyuto keeps that muscle memory while giving you Japanese steel. If you have no such habit, a Santoku is the easier and more useful place to start. The two overlap heavily; the choice is mostly about which motion your hands already know.
9.Single bevel vs double bevel
This distinction causes more confusion than any other, so briefly.
A double-bevel blade is sharpened on both sides, like every Western knife. It cuts straight down and works identically in either hand. Every shape described in this article, as sold for home kitchens, is double-bevelled.
A single-bevel blade is ground on one side only, with the other side flat or slightly hollowed. It produces an astonishingly clean cut, this is what sushi chefs use, but it steers sideways in the cut, must be learned deliberately, is handed (a right-handed one is unusable left-handed), and is considerably harder to sharpen.
Traditional Kiritsuke and Yanagiba are single-bevel; the Kiritsuke you will find in a home-kitchen range almost never is. If you are buying your first Japanese knife, you want double bevel. If a listing does not say, assume double and ask.
10.Blade height: the spec nobody mentions
Length gets all the attention; height, the distance from spine to edge at the heel, quietly decides how a knife feels.
A tall blade gives knuckle clearance: your fingers clear the board when the edge is down, so you can cut with a relaxed hand instead of an awkward one. It also gives you a broad face to sweep chopped food into a bowl. That is why a Nakiri is tall and why people who cook a lot of vegetables end up liking tall blades in general.
A short blade is nimbler and better in the hand, which is exactly why a Petty is short. Between the two, a Santoku sits in the middle: enough clearance for comfort, not so much that it feels like a wall.
If a knife has ever felt "cramped" without your being able to say why, it was probably too short in the height, not the length.
11.Which one belongs in your kitchen
| If this sounds like you… | Shape | The reason |
|---|---|---|
| I cook a bit of everything, a few times a week | Santoku | Widest coverage, gentlest learning curve |
| Most of what I cut is vegetables | Nakiri | Flat edge separates cleanly in one pass |
| I'm confident and want more blade | Kiritsuke | Reach, plus a precise tip for detail |
| I already own a main knife | Petty | Fills the gap you keep hitting daily |
| I rock-chop and always have | Gyuto | Keeps the motion your hands know |
If you expect to own more than one
The order matters more than the total:
- A generalist: Santoku, Kiritsuke or Gyuto. The knife that does most of the work.
- A Petty. The step most people skip and then regret, because it turns out to be the one in your hand most often.
- A Nakiri, once you have noticed how much of your prep is vegetables.
A fourth knife rarely earns its place at home. Past this point, money goes further on a good end-grain board and a whetstone: a sharp mid-range knife beats a dull excellent one every single time.
12.Five mistakes worth avoiding
- Buying by length instead of by board. Measure your board first. A 240 mm blade on a 30 cm board is a knife you will quietly stop using.
- Buying a Nakiri as a first and only knife. It is superb and it is a specialist. Without a point, a lot of ordinary tasks become fiddly.
- Buying carbon steel without meaning it. Aogami and similar steels take a finer edge and hold it longer, but they must be dried after every use. If several people in the house will use the knife, that habit will not survive.
- Buying a set before knowing your own habits. Sets are priced to look like value and usually contain at least one shape you will never reach for. Buy one, cook with it for a month, then decide.
- Ignoring sharpening. Any of these knives, unsharpened for two years, performs worse than a supermarket knife that saw a stone last week. Budget for a whetstone at the same time as the knife.
13.The short version
Flat edges push and pull; curved edges rock. Tall blades clear your knuckles; short blades work in your hand. Pointed tips do detail; rounded tips are forgiving. Every shape in this article is one combination of those three trades, and once you can see that, the names stop mattering.
If you want one knife and no further reading: a 180 mm Santoku, double bevel, in a steel that matches how much care you will realistically give it.
